Gluten Free At The Spa ? Cc Gluten Freed

After four grueling years at UC Berkeley, I have finished my degree in Public Health.? My reward?? A relaxing vacation at the spa, Rancho La Puerta.? Located in Tecate, Mexico, this spa focuses on fitness, wellness and nutrition. Being gluten free makes total relaxation difficult to achieve even when at a spa.? Overall, I loved my experience at the Ranch and took home some interesting insights that I hope will improve my gluten free experience.

Insight #1 Constant Vigilance

Although I often write about the importance of focus and effort when it comes to being gluten free eg reading labels on products you?ve bought a thousand times or asking about cross-contamination even when you think the dish is safe, I thought that a place committed to health with a focus on food might be an exception. I thought I could drop my guard. What I found at Rancho La Puerta is that this is simply not the case.

While at the Ranch, I saw a poster advertising their ?Gluten Free Thursday? cooking class.? Here is what happened:

The cooking classes at the spa are usually taught by their Executive Chef, Denise Roa. However, once a week the spa invites guest chefs to teach.? This week, on Gluten Free Thursday, the spa had invited Romney Steele aka Nani, the granddaughter of the founders of the restaurant Nepenthe in Big Sur, California.? The cooking class was set up so that groups of two spa guests would make one dish using a recipe provided by Nani.

I was working with my Aunt Celia on a baked Sea Bass dish with an orange and tarragon relish.? The menu was out of this world.? All of the ingredients were picked fresh from the Ranch?s vegetable garden.? In fact, before starting the class, the spa guests had to go pick (literally) their ingredients from the garden.

All of the recipes were gluten free and things went smoothly for the most part until we encountered a problem: Nani included a recipe for a pea puree that needed some form of chip/starch-medium to eat.? Because this was overlooked when preparing the class, Nani asked one of the workers to go grab some pita bread from the back for the dish.? See the problem?

If someone had blindly accepted the sign on the door saying ?Gluten Free Thursday? they might not even think to ask if the pita bread was gluten free.? My Aunt and I quickly noticed and spoke to Nani about the gluten situation to which she replied ?Well, you don?t have to eat that dish.?? Despite this discouragement, the Executive Chef, Denise, was horrified at the lapse in gluten free practice and grabbed and grilled some corn tortillas to replace the pita bread.

The take away point? Even when places advertise something as gluten free remain vigilant.

Insight #2 Simple Healthful Foods Are The Way To Go

I have read this advice on many blogs, pamphlets, books and websites but I never really understood it.? Ordering simple, healthful dishes can make being gluten free a lot simpler.?? At the Ranch, I found that this was absolutely true. Why is it not until now that I experienced the ease that accompanies simply prepared meals?? Simple foods are hard to find at restaurants!

At the spa every dish was made with ingredients found in their gardens or grown within a 30 mile radius of the Ranch.? When you looked at the meal, you could tell what components made up the dish.? Of course, you should always check about sauces and ingredients but I noticed that dishes that are truly simple and truly healthful aren?t muddled with questionable ingredients.? The Beet and Basil Salad was a salad made up of?well, beets and basil.? The extravagant, calorie-laden entrees that you find at most restaurants make being gluten free so complicated!? If I saw ??Carrot Soup? on a menu at most restaurants, I would not order it.? It may have flour as a thickener, contain malt vinegar or come garnished with fried onion crisps. At the Ranch, I knew the Carrot Soup was made of carrots and more carrots.

I haven?t quite worked out how to use my new insight about simple, healthful foods to improve my gluten free lifestyle but when I do, I?ll be sure to post.? For now, I am simplifying the meals I make at home and trying to choose simple items at restaurants but still accompany my order with a long series of questions.

Insight #3 Apparently, Being Gluten Free Is Hard, So Be Nice To Yourself!

Rancho La Puerta is a spa dedicated to health and fitness. The spa?s clientele are hyper-aware of their diets and have strict exercise regimes.? These people demonstrate the type of dietary discipline I can only dream of.? They eat only what they need. In other words, teeny tiny portions.? They limit their sugar intake, their meat consumption and their dairy consumption.? They exercise every day and, when given the choice, choose the salad entr?e over the hamburger with fries.

Despite the fact that I found their discipline incredible and something to aspire to, I overheard conversation after conversation about how people had ?tried to go gluten free but it was too hard.?? These insanely disciplined and professionally successful people admitted that being gluten free was too much of a challenge!? One woman said ?I felt so great after that month but I just couldn?t keep it up.?

It was so nice and refreshing to hear other people commenting about the difficulty of being gluten free.? It is a thankless job, demanding self-discipline, constant vigilance, intelligence and the ability to not only articulate your needs effectively but to advocate for your health in the face of constant obstacles.? It is funny but talking to the health nuts at the spa about the gluten free diet made me kind of proud that I am gluten free.

Take away point? Every now and then, take a moment to appreciate yourself and all the work you put in to being gluten free.? Most people don?t know how much effort it takes to truly be GF.? Just remember to be kind to yourself and be proud of the fact that you are gluten free.

Although I couldn?t help but think about my blog while at the spa, I did manage to relax and decompress from four tough years at UC Berkeley.? I hope to bring my insights from the spa home with me by practicing constant vigilance, choosing simple healthful meals and appreciating my GF efforts and I hope that you do too!

Sprint to shut Nextel as early as June 2013

NEW YORK (AP) ? Sprint Nextel Corp. on Tuesday said it will shut down the Nextel network as early as June 30 next year, cutting off service for its characteristic walkie-talkie-like Nextel phones.

Sprint had already said the shutdown would commence sometime next year, but had not set a date. The Overland Park, Kan., phone company bought the Nextel network in 2005, and has lost money every quarter for the last four years as it's struggled with the cost of running two incompatible wireless networks.

There were 5.4 million phones active on the Nextel network at the end of March. Many Nextel customers are businesses or government agencies who issue the phones to construction crews and other mobile workers. Sprint now faces the challenge of convincing these customers to move to the Sprint network rather than competing carriers. As part of the pitch, Sprint has added phones with a walkie-talkie-like "push-to-talk" feature.

Sprint is deactivating the Nextel network to make room on the airwaves for a new fourth-generation, or "4G" data network. The Nextel network is a second-generation, or 2G, technology with low data speeds that are unsuitable for smartphones.

Separately, Sprint said Tuesday that it's been approved for a $1 billion line of credit to build out the new network. The credit line is provided by a syndicate of banks led by Deutsche Bank AG of Germany and is backed by the Swedish government's export credit fund.

The Swedish government is involved because one of Sprint's main vendors for the network is LM Ericsson AB of Sweden.

Sprint has previously said that it may get up to $3 billion in vendor financing from the Ericsson, Samsung Electronics Co. and Alcatel-Lucent SA.

Sprint shares were unchanged midday Tuesday at $2.62.

When you have an online business, you need to have the trust of your audience. It is important, especially if you want to be successful. Method for building artificial tissue devised

ScienceDaily (May 28, 2012) ? New York University physicists have developed a method that models biological cell-to-cell adhesion that could also have industrial applications.

This system, created in the laboratory of Jasna Bruji?, an assistant professor in NYU's Department of Physics and part of its Center for Soft Matter Research, is an oil-in-water solution whose surface properties reproduce those found on biological cells. Specifically, adhesion between compressed oil droplets mimics the mechanical properties of tissues and opens the path to numerous practical applications, ranging from biocompatible cosmetics to artificial tissue engineering.

Their method is described in the journal the Proceedings of the National Academy of Sciences.

Previously, Bruji?'s laboratory has determined how spheres pack and devised methods for manipulating the packing process. In this PNAS study, Bruji? and her research team sought to create a method that would address the role of packing in tissues from the point of view of how mechanical forces affect protein-protein adhesion between cells.

In biology, cell-to-cell adhesion is crucial to the integrity of tissue structure -- cells must come together and stick in order to ensure tissue cohesion. However, the daunting complexity of biological systems has long prevented their description using general theoretical concepts taken from the physical sciences. For this reason, the research team designed an original biomimetic solution, or emulsion, that reproduces the main features of cell-to-cell adhesion in tissues.

Emulsions form the basis for a range of consumer products, including butter, ice cream, and milk. In addition, the emulsion in the PNAS study is tuned to match the attractive and repulsive interactions that govern adhesion between cells. The experimental conditions reveal the circumstances under which pushing forces are necessary to create adhesion.

By varying the amount of force by which the droplets of oil were compressed by centrifugation and the amount of salt added to this solution, the NYU team was able to isolate the optimal conditions for cell-to-cell adhesion. Screening electrostatic charges by the addition of salt and compressing the droplets by force enhances protein-protein interactions on the droplet surfaces. This leads to adhesion between contacting droplets covering all the interfaces, just as in the case of biological tissues.

Their results, which matched the researchers' theoretical modeling of the process, offer a method for manipulating force and pressure in order to bind emulsions. This serves as a starting point for enriching a range of consumer products, by reconfiguring their molecular make-up to enhance consistency and function, and for improving pharmaceuticals, by bolstering the delivery of therapeutic molecules to the blood stream.

The study's other authors were Lea-Laetitia Pontani, a postdoctoral research scientist, and Ivane Jorjadze, a graduate student, both from NYU's Department of Physics and the Center for Soft Matter Research, as well as Virgile Viasnoff, an Associate Professor at the National University of Singapore and the French research institute, CNRS/ESPCI.

The research was performed in the NYU Materials Research Science and Engineering Center (MRSEC), which is supported by the National Science Foundation.

Behold: The First Video Taken with Google Glasses

Google has unveiled the first video taken with its sci-fi eyewear concept, Project Glass. The topic: jumping and flipping on a trampoline, doing a backflip while wearing Google glasses.

Google launched its Project Glass goggles on Google+ in April, and the news sent the concept of Google?s futuristic glasses ? which would project augmented reality images into wearers? field of vision ? into a worldwide frenzy on the web. Although Google co-founder Sergey Brin has been testing the device and teasing pictures to show the Internet what it can do, this is the first time we?ve seen a video taken by the device itself.

In addition to taking pictures and video, the glasses can perform many tasks performed by a smartphone. For example, while wearing the glasses, you would be able to see weather forecasts and what?s on your calendar for the day, as well as send text messages and emails to friends and family ? all projected right before your eyes.

Google told Mashable in April that selling the glasses this year would be ?very unlikely.?

And there?s certainly no good reason to continually be a butthead just to see how many people we can aggravate today.? (Of course, it is sort of fun to stir the pot once in a while to see what happens, isn?t it?)? I realize too, that we all have our individual reasons for wanting to be accepted and liked.? That?s OK to a point.? But when one of our main objectives in life is to be universally loved, we?re just spinning our wheels because it ain?t agonna happen.

My suggestion?? Just be you ? whatever ?you? happens to be today.? Be goofy!? Let it all hang out, baby!? You can?t control what other folks think about you anyway.? (Influence - yes, control ? no?)? If you have what you believe is a valid opinion ? about anything ? express it.? It?s not necessary to be argumentative or confrontational.? That can quickly build walls and become an obstacle to any kind of productive communications.? But there?s nothing at all wrong with being a creative, independent thinker.? Can you imagine what the world would be like if these types of individuals had never existed?? We?d still all be huddled in caves wondering where our next meal was coming from.? Thank God for goofiness!

?

So the next time you have a major urge to conform just for conformity?s sake ? force yourself out of the cave and introduce your personal new ?wheel? concept to the world.? And whenever you see someone else wandering off in what you might immediately feel is likely a weird direction, at least give ?em a pat on the back for having the courage to be themselves and the initiative to try to blaze a new path through life.? This world can always use more thinkers ? even the really goofy ones!
